Cooking Maple-Cranberry Sauce

The Lesnikoski’s Vermont Cranberry Company in East Fairfield VT harvests up to 30,000 pounds annually. Cooked with a little maple syrup, localvores can make a delicious, completely local cranberrry sauce:

Vermont Maple Cranberry Sauce:  Using a ratio of 1 cup VT cranberries to 1/4 cup water and 1/4 cup maple syrup (multiply as needed) cook carefully for about 5 minutes, stirring occasionally, until the cranberries”pop”. Cool to room temperature and serve.
