Mint Tea

Mint Tea

Mint is a bit of a rogue in the garden; it’s a wanderer and often spreads to places where it is not welcome . . . but come winter, it is a delight to have a goodly supply of dried mint for tea.  I harvest stalks of mint, tie them with a rubber band, and hang them on hooks in a closet. They dry quickly and can then be used throughout the year.

Another tea to consider might be rose hip tea – check out Vermont’s Local Banquet for directions.
